Can personalized copy hurt your Google rankings?
Only if you show Google something people never see. Google calls that cloaking. Change copy for real visitor groups, and let Googlebot see a normal version.
Where the line is
Google's spam policies define cloaking as showing different content to users and search engines to manipulate rankings and mislead users. Personalization for people is not cloaking. Special pages for crawlers are.
A safe setup
Keep a default version of every page that any visitor can get. Swap headlines and blocks for groups of visitors on top of that default. Never check the user agent to feed crawlers extra text.
